"Because 100% VL beef has very little fat to lubricate the meat, the secret is in the simmer. If you are making a stew, keep the heat low and ensure there is plenty of liquid. For a quicker stir-fry, marinate the beef in a little soy sauce or lime juice for 20 minutes first—the acidity helps to 'velvet' the meat, keeping it tender during a high-heat sear."
