The Fillet Steak is the "crown jewel" of the butcher’s counter. Cut from the underside of the short loin, this muscle does very little work, resulting in a cut that is world-renowned for its lean, buttery, and melt-in-the-mouth tenderness. If you are looking for a sophisticated, "fork-tender" dining experience, there is simply no substitute for the fillet.
At Stack Butcher, our fillets are hand-carved by our master butchers into thick, barrel-shaped portions. Because it is naturally low in fat and has a delicate grain, it offers a refined and subtle beef flavour that is the perfect partner for rich, decadent sauces.

The Rare Treat: Fillet is best enjoyed Rare or Medium-Rare. Season simply with sea salt and black pepper. Sear in a hot pan for 2–3 minutes per side to develop a crust while keeping the center vibrant and soft.

Butcher’s Top Tip
"Because the fillet is so lean, it can dry out if overcooked. The secret to a perfect fillet is the 'Sear and Rest.' Get your pan smoking hot to lock in the juices with a dark crust, then let the steak rest for at least 10 minutes in a warm place. This allows the internal temperature to equalize, ensuring every slice is pink, juicy, and incredibly soft."
