The Pitmaster’s Cooking Guide
To ensure every element of your Mixed Grill is cooked to perfection, follow our "Staggered Start" method:
The Sausage: Start these first! They take the longest (12–15 minutes) over a medium heat.
The Chops & Steaks: Add the Lamb Chop and Pork Steak next (8–10 minutes total), as they benefit from a slightly longer cook to render the fat.
The Gammon & Rump: Finish with the Gammon and Rump Steak (3–5 minutes per side). The Rump is best served medium-rare, while the Gammon should be slightly charred at the edges.
The Rest: Crucial Step! Let the whole plate rest for 5 minutes under foil. This allows the juices to redistribute, ensuring every bite is succulent.
