Our master butchers hand-select the finest beef, ensuring each joint is expertly trimmed and topped with a thin, natural layer of fat. This "fat cap" is essential; as the beef roasts, the fat renders down, basting the lean meat beneath to keep it succulent and flavorful.

Butcher’s Prep: Available in various weights. Hand-tied with butcher’s twine to help the joint hold its shape and cook evenly.
Storage Advice: Keep refrigerated below 5°C. For the best roast, remove from the fridge 45 minutes before cooking to reach room temperature.
Freezing: Suitable for home freezing on the day of purchase for up to 6 months.
Cooking Inspiration
The Traditional Roast: Season heavily with sea salt and cracked black pepper. Roast at 180°C for 20 minutes per 500g (plus 20 minutes) for a perfect medium result.
Pot Roast (Braised): For an even more tender finish, slow-cook the silverside in a lidded pot with beef stock, red wine, and root vegetables. The moisture ensures the lean meat stays incredibly moist.
Homemade Corned Beef: Silverside is the traditional cut used for salt-curing and brining to create your own artisanal corned beef or pastrami.
